Abstract

The trypsin inhibitors as a group form one of the major anti-nutritional factors in soybean [Glycine max (L.) Merrill] seed. Several different trypsin inhibitors have been reported to be present in soybeans. However, much of the soybean trypsin inhibitor activity is thought to be due to the protein SBTI-A2 which is generally known as the Kunitz trypsin inhibitor.
