3.1 HISTORY AND USES
In ancient times grain amaranths were basic crops in the Americas, and they h~ve persisted to the present in isolated pockets in traditional agriculture. Amaranths are broad-leaved plants which are striking in appearance due to various coloration of all parts of the plant. They produce small ·seeds in large quantities.
