dc.description.abstract <p>Beef does not constitute as large a proportion of the meat consumed on the farm as it should. This is due partly to the fact that many farmers do not know how to kill and cut beef to the best advantage. Since fresh meat Is quite perishable, heavy and discouraging losses are often sustained thru improper handling. Yet there Is nothing difficult about the proper method of handling meat, altho there are a few details which must be strictly attended to.</p>
